This is NOT A PREORDER. THIS KNIFE IS AVAILABLE. The chef knife you are purchasing is exclusive to you and is a collaboration of Carbon Peaks LLC and DeVos Woodcraft. The collaboration was a heck of an effort to get the handle material complete. Numerous hours were spent by Kris developing the product. His skill and craftsmanship are second to none. Thank you for choosing Carbon Peaks LLC to make this one-of-a-kind knife. This knife has a 10” blade that is made from 1084/15N20 Damascus San Mai over an 80CRV2 core. The Handle material is a set of DeVos Woodcraft Chaotic knife scales. The handle material also includes G10 Micarta for the liners and stainless mosaic pins.

Care of the knife: DO NOT PUT IN THE DISHWASHER!!!! I have to say this as some do not understand how carbon steel behaves. The Steel has excellent edge retention but lacks the stainless qualities. When the knife first arrives, make sure to put a thin coat of mineral oil on the blade. Try not to get too much on the blade. just a couple of drops on each side should do. Use as desired after. Once finished with food prep or serving, rinse off with water. If you use detergent, only use dawn. Little detergent should be used, to lightly clean. Once clean, dry off thoroughly. Once dry, re-oil the blade and store. Please do not throw it in a drawer as this is how knives get scratched. If you have a method to hang it up, this works best. If you care for it each time you use it, it will last a long time. There are no refunds due to the care these knives take. The knife will patina (darken) over time. This is natural. The blade should patina evenly over time.
